Blue Water Bar
It's built inside an old warehouse and everything glitters as if under the deep blue sea. Crystal curtains and a gleaming white bar stand like an island in the middle of the huge room. Bayswater Brasserie
Charlie Ainsbury - king of classics and head bartender here - mixes a mean Hemingway behind the well-stocked bar. Sit back in one of the raspberry banquettes for the full effect. 19-33 Bayswater Rd

Cushion

Firefly
The skinny room and even skinnier bar plays host to an astonishing selection of liquor from around the world from the dustiest old bourbons to gleaming bottles of gin and a huge selection of rum. And yes, their drink making skills match the booze. 17 Hickson Rd, Dawes Point, 2000. (02 9241 2031).

Crystal Bar
It's burlesque-a-go-go here, sure, but they also mix a seriously tasty beverage and if you close your eyes and put your face against the cool sandstone wall, it feels like you're drinking cocktails in a Victorian jail.
