Escargot

Eez Fronsh for snail, non? Yes. Two kinds are found in France - Roman snails and petit gris, but it's the petit gris which are farmed and commonly found at the market or frozen. In Australia, the snails you find are all farmed but don't appear on menus that often as there aren't a lot of producers dealing with them.

According to Larousse, snails were among the first animals to be eaten by man and the Romans actually had ‘snaileries' where they fattened them up on wine and bran. Picking out common garden snails and purging them at home (they need to have, er, pooed themselves out before they can be eaten) isn't sensible as the snails could've eaten anything or come from anywhere.

Instead visit a restaurant like Apres and have 'em prepared properly with lots of butter.
