Allow us to introduce you to the Time Out Taste Test: a novel haute cuisine experience, part of the March into Merivale food festival, in which apprentice chefs from some of Australia's top restaurants compete by each cooking a course that you, our readers, vote on to decide who is the best. Think of it as a cross between MasterChef, The Apprentice, Iron Chef and Ready Steady Cook. Only better.

We had so many apprentice chefs apply from top Sydney restaurants – including Est., Quay, Marque, Rockpool, Glebe Point Diner and more – that we decided to run heats with the top four apprentices going through to a final. The first night sold out in 42 minutes, while the second night and the final both sold out in 25 minutes.

We're now putting on six courses (rather than the orginally planned five) from different apprentices on each of the two heats: Wednesday 17 and Thursday 18 March.

The top two from each heat will advance through to a cook-off final on Monday 22 March – with surprise name guest chefs providing the other two courses.

So each night, diners will be served a six-course tasting degustation menu produced by some of Australia's most promising up-and-coming chefs for just $60 a head. It's unbeatable value.

Guests will also get a Cointreau cocktail on arrival and a chance to win one of several door prizes including dinner for two at Sydney's best restaurants, Global knives, Riedel glasses and Scanpan cookware.

The winner will be announced at the end of the final on Monday 22 March and full coverage will appear in the May issue of Time Out Sydney magazine.
